Redbreast Distillery The origins of Redbreast Distillery begin in the mid-19th century with the London-based Wine importers, W & A Gilbey. Enjoying success during the 1850s, the company expanded and established premises in Edinburgh, Belfast and Dublin. Initially known for importing wines, sherries and ports, Gilbey's quickly began to acquire large stocks of Irish whiskey sourced from 'the most celebrated Dublin Distilleries' and sold under a proprietary name of 'Gilbey's Castle Whiskey'. By 1887, Gilbey's were marketing 'sole make' and selling spirits labelled with the 'John Jameson & Sons' name. This partnership flourished at the end of the century, as Gilbey's had access to large numbers of ex-sherry and port casks which could be filled with Jameson new make and matured in their Dublin-based vaults. The first emergence of Redbreast was seen in 1904 with the release of a 12 year old spirit labelled 'J.J. Liqueur'. Despite not yet bearing the name, the distinctive bottle shape and red and white label are instantly recognisable as those used by Redbreast during the 1960s. However, in 1912, just under a decade later, the Redbreast name emerged on a Gilbey's 'famous' bottling – suggesting that it was already colloquially used. The name itself has been attributed to the then chairman of Gilbey's, who was an avid ornithologist and named the brand after the European Robin. Throughout the 20th century, the brand experienced both highs and lows under the Gilbey name until 1985, when it was sold to Irish Distillers. After nearly a decade of absence, Redbreast was re-introduced in 1991, and benefiting from an enhanced wood-ageing programme has gone from strength to strength. Today, Redbreast is known to be one of the only producers of single pot still Irish whiskey. This style requires the spirit to be made by a single distillery from a mixed mashbill of malted and un-malted barley and distilled in a copper pot still. One of only a handful of single pot still whiskeys in existence, Redbreast is one of only two to have been in constant production since the early 20th century and remains one of the most respected and recognised Irish Whiskeys. Redbreast Dream Cask Series The Dream Cask series comprises of seven extraordinary whiskies that were released annually between 2018 and 2024 on World Whisky Day. Each edition was carefully selected by Master Whisky Blender Billy Leighton and Dave McCabe. Over the course of seven years each release has allowed the pair to explore exciting and unusual methods of maturation and has only been available in limited numbers to Redbreast Birdhouse members by ballot. The First Edition, which was released a year after the initial idea was conceived during a live whisky tasting conduced by McCabe and Leighton, was originally bonded in 1985 in refill American Oak ex-Bourbon barrels. After an initial 26 years, the spirit was re-casked on March 8th 2011 into a 1st fill Oloroso Sherry butt and allowed to mature for a further 8 years. The following year the Second Pedro Ximinez Edition was revealed. A combination of four exceptional spirits – the first distilled in 1998 and matured in ex-bourbon, then re-casked into a Pedro Ximenez sherry butt in 2012; another distilled in 1995 and matured in ex-bourbon and then ex-oloroso sherry butt in 2012; the third distilled in 1985 and matured in a second-fill ex bourbon barrel and finally a 1997 distillation, matured in another second-fill ex bourbon barrel were all re-casked together in Pedro Ximinez cask #374932. All 924 bottles released sold out in a staggering 14 minutes. World Whisky Day 2020 saw the release of the Third Ruby Port Cask Edition – this time a mix of ex-bourbon, Oloroso sherry, and ruby port cask matured spirits, finally re-casked together into ruby port cask #400295. A highly anticipated Fourth Ruby Port Cask Edition was released in 2021, another superb spirit comprising of expressions matured in ex-bourbon, Oloroso sherry and ruby port casks. These were then further matured together in Oloroso sherry cask #400294 before bottling. The Fifth Double Cask Edition, launched in 2022, is the marrying of two 'Dream Casks'. The first chosen by Leighton, was laid down in May 1990, while the second ex-bourbon – chosen by McCabe was filled in 1991. The Sixth Port to Port Edition is a combination of two outstanding ex-bourbon and Ruby port casks. Finished together in tawny port casks for three months before being bottled and released in 2023. Finally in March 2024, the Final instalment of the Dream cask series was released in the form of the 38 year old Zenith Edition. Distilled in 1985, the same year as the first release, it was matured in bourbon barrels, then re-racked into single first-fill Oloroso butt #38404 in 2013. The conclusion to the series came at the same time as the renowned Master Blender Billy Leighton stepped down from the role after five decades, handing the baton onto his colleague Dave McCabe. *Please note that the photographs are for illustrative purposes only and not the actual bottles sold in this lot.
